Hello! My name is Kathryn - a Georgia girl and bona fide bread lover. Well, that is until I met and fell in love with Justin. Let's be real, I still LOVE bread and all things gluten-ful, but have given up that life for a gluten-free one - because now, I am a gluten-free lover.

I have always loved food. Cooking it, eating it, discussing it. I hope you'll try some of the recipes I've posted and you'll see - gluten-free cooking is accessible and delicious!

Candied Corn - Steamed Green Beans

Since I just started this tonight (although, apparently I started a blog 2 years ago and never posted anything) I will try to keep this short. My punctuation and grammar will vary in correctness, my vocabulary, while growing, is..not…awesome… No matter! I am doing this for all foodies everywhere! assuming you somehow found me…Ok, moving on.

Dinner: (It was simple tonight and I didn’t even know I was going to be starting the blog! Way to plan ahead, kath!) Grilled steak, sauteed corn, steamed green beans.

J “does the grilling.” (we’re working on it…) The corn recipe I made I got from foodnetwork.com. It’s a ‘Down Home with The Neely’s’ (as my hips shimmy uncontrollably beneath me) recipe and really, SURPRISINGLY good.

Candied Corn
6 ears fresh corn, removed from cobb (2-3 c)
1 T butter
3 T shallots, diced
1 T brown sugar
1 T honey
1/4 tsp cayenne pepper

Melt butter [I added 1 T olive oil] in a sauce pan over medium heat. Add shallots and saute until just translucent. Add corn [I used 1, 16 oz pkg frozen kernels] and saute until heated through. Add brown sugar, honey, and cayenne [I added 3/8 tsp, but we like it hot around here…] to corn and saute a few minutes more. Serve hot or warm.

For the green beans I just steamed frozen cut green beans in the microwave, according to package directions. (Drain off any excess liquid when they come out) and season with 1-2 T Smart Balance margarine, salt and pepper. Simple (and easy), mindless, and good for you.
